Aunt Carole's Conference Coffee Cake (is this an oxymoron?)


Overnight Cinnamon Pecan (Coffee) Breakfast Cake

Cake
3/4 C butter soft
1 C sugar
2 eggs
2 C flour
1 tsp baking powder
1 tsp baking soda
1 tsp nutmeg
1/2 tsp salt
1 C sour cream

Streusel Topping - combine in a small bowl
3/4 C firmly packed brown sugar
1/2 C chopped pecans or other nuts
1 tsp ground cinnamon

1. for cake beat butter and sugar til light and fluffy, add eggs, one at a time, beating after each until combine.
2. In a separate bowl combine flour baking power, soda nutmeg and salt.
3. To the egg/butter mix add four mixture alternately with sour cream beginning and ending with flour mix. mix til blended.
4. Spread batter into a greased 9 x 13 greased pan.  Sprinkle streusel topping over the batter.
5. Cover with plastic wrap and let ckill 8 to 18 hours.
6. Preheat oven to 350  Bake cake 35 minutes or until toothpick comes out clean. Serve warm or not

Lauren's Pesto Chicken Pasta

Pesto Chicken Pasta

16 oz. penne pasta
4-6 oz. crumbled feta
6 oz. pesto
6 Roma tomatoes or 10 cherry tomatoes halved
Small pkg. baby spinach
4 grilled chicken breasts cubed
1/4 cup milk
3/4 cup Hidden Valley Ranch dressing

For sauce, mix together:
Milk
Ranch dressing
Pesto

Mix cooled pasta, chicken, feta, tomatoes, and sauce.
Add spinach just before serving.
